Quinoa & Chickpea Salad



Ingredients: 1 cup cooked quinoa, ½ cup canned chickpeas (drained and rinsed), cherry tomatoes (halved), cucumber (diced), a handful of spinach, a squeeze of lemon, salt, and pepper.

Instructions:

Cook Quinoa: If your quinoa isn’t already cooked, cook it according to package instructions. Let it cool slightly before adding to the salad.

Prepare Vegetables: Rinse and halve the cherry tomatoes, dice the cucumber, and rinse the spinach.

Combine Ingredients: In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, cucumber, and spinach.

Dress the Salad: Squeeze fresh lemon juice over the salad and season with salt and pepper. Toss everything together until evenly mixed.

Serve: Enjoy fresh, or refrigerate for a cold, refreshing salad.
